The Star of Bombay Martini Trolley Comes to Eau de Vie

Of all the cocktails, the martini is not merely a drink. The martini is a ritual. And what better way to enjoy the classic than to have a dedicated martini trolley come to you at one of your favourite Sydney bars.

Eau de Vie bar in Sydney (and EDV Melbourne) are offering a martini trolley service where you can relax in the speakeasy bar’s surrounds while a bartender wheels the trolley to your table and prepares you a martini.

For this experience, Eau de Vie has partnered with The Star of Bombay to bring all the theatrics to the classic cocktail experience with a choice of 4 martinis, each designed to tell a story and take you on a historical journey.

The Star of Bombay Martini Trolley is equipped with a liquid nitrogen tap used to chill the drink in seconds. The cocktails are designed to appeal to the martini novice who may be reluctant at first to try the spirit forward cocktail as well as the seasoned martini drinker which may prefer it dry and dirty.

The ‘Magda Martini’ is a riff on the Vesper Martini, named after a James Bond character in Octopussy. Star of Bombay gin, Grey Goose vodka and Lillet infused with earl grey tea make up the drink along with a black pepper tincture. This classic dry martini gets a hint of tannins from the tea along with the aromatics of bergamot. It comes with served with olives on the side.

‘The Edwardian’ is an interesting twist on the Hanky Panky cocktail from The Savoy Hotel of 1903. It has Star of Bombay Gin, Rubino Vermouth and Braulio in lieu of Fernet Branca which gives alpine aromatics that complement the orange blossom notes of the Persian fairy floss. The drink is vermouth forward with the herbal notes of Braulio on the finish.

The ‘Captain Ritz’ is an adaptation of the Ritz Sidecar from Paris with Star of Bombay, calvados, dry curacao, citric acid and a spray of lemon oil essence. It aims to replicate the flavours of the Sidecar cocktail via a gentle nod to a true martini.

Named after the Simpson Desert (not the cartoon series), The ‘Simpson Martini’ is Eau De Vie’s take on the traditional dirty martini served at the Connaught Hotel in London. The drink captures the flavour profile of Australia. Maidenii dry vermouth is infused with samphire and saltbush, both fresh and dry, stirred with Star of Bombay and honeyed apricot and smoked hickory bitters. It’s dry, salty and delicious, and the one to savour at the end of the experience.

The Star of Bombay Martini Trolley service is available during Eau de Vie’s opening hours. The trolley service costs $24 for one martini, or you can sample four martinis for $50. Walk-ins are available for seated booths and tables though reservations are recommended. It’s an ideal experience for a date night or a romantic evening out.
