The Watershed & Cohibar, Sydney

We take a first look at The Watershed & Cohibar in Darling Harbour.

The Watershed Hotel & Cohibar at Sydney’s Darling Harbour have unveiled their new look in time for summer.

Recently taken over by new owners, the venues have undergone impressive renovations and rebranding and have enlisted Chef Stuart Murphy, (ex Sydney Rowing Club) who has trained under Andy Logue at The Italian, a hatted restaurant in Melbourne.

The venues launched with a VIP party with Bacardi cocktails and tasty canapes. The terrace of Cohibar hosted a cigar and rum tasting with Bacardi 8 Rum and Montenegro Cigars by the Sydney Cigar Club and The Gentleman’s Cabinet.

Located outside the lockout zone, the venues offer a variety of spaces for private hire along with a 24 hour license.
