Situated at the former site of Bistro Fax Restaurant, the beautiful space has been designed by Pascale Gomes-McNabb (Cutler & Co, Cumulus, Yellow and Monopole) and combines the natural grandeur of the heritage building with modern design. Marble, stone, dark natural wood and custom artwork create a classy and modern interpretation of one of Sydney’s most historic rooms.

Co-owners Brent Savage (head chef) and Nick Hildebrandt (sommelier) bring a relaxed, modern and informal dining experience with an elegant a la carte menu. Dishes include raw and cured starters including Bentley’s signature house made cured meats, scallop and foie gras, seafood and fish, birds and meat as well as mains grilled over charcoal. A separate bar menu offers more casual dishes including charred beef tartare and a Bentley sandwich.

The Bentley has seating for 80, bar dining for up to 30 as well as a private dining and an event space and opens six days a week for dinner, and five days a week for lunch. Hotel guests can enjoy Bentley’s cuisine from the comfort of their rooms.

The Bentley opens officially on Tuesday 17 December 2013 for lunch and dinner.
