Marble Bar in Sydney Hilton relaunched last week with sophistication, style and the return to timeless classics.
Entering the landmark bar beneath the Hilton Sydney transports you to another era. Resplendent with ornate features, the iconic 121 year old venue impresses with two vintage mahogany bars surrounded by original Edwardian paintings beneath an intricate plaster ceiling and over 100 tonnes of the world’s finest marble.

The cocktail list features thirteen all time classics that are well-crafted using premium spirits and priced below the $20 mark. The Vesper Martini, popularised in James Bond’s Casino Royale sits alongside the Charlie Chaplin, a tasty mix of Sloe Gin, apricot brandy and lime juice. You’ll also find the Moscow Mule served in a copper mule, and the Old Fashioned, made with Woodford Reserve bourbon.
Marble Bar has a solid whisky selection that invites dramming in elegant and classic surrounds. The whisky menu is divided in regions and features drams from the Scottish Highlands, Lowlands, Islay, Scottish Islands and Speyside as well as new world whiskies from Australia (Starward, Belgrove, Sullivans Cove) and Japan along with a list of popular American whiskies. You’ll also find a modest selection of Irish and Canadian whiskies.
Bar food features Truffled French fries with Parmesan cheese ($14), Gourmet Hot Dogs ($15), Spicy Garlic and Tomato Prawns with toasted Turkish bread ($24) and wood-fired pizza ($24) to name a few. Added to the line up of offerings, Marble Bar also features popular live bands on stage such as a 1950’s rock-and-roll jump jive band.
