Sydney has a new Cuban themed bar, Hacienda which opened early August. The bar takes inspiration from the grand plantation architecture of Cuba along with modern vintage hotels of 1950’s Miami.
Hacienda is located in the Pullman Quay Grand Sydney Harbour overlooking Sydney harbour and is a collaboration of Applejack Hospitality (owners of Bondi Hardware, The Butler and Della Hyde) and AccorHotels to transform the venue along with the food and beverage offering.
The food menu follows the theme with Latin and American flavours such as Yuka fries, buttermilk fried chicken, pork neck mojo and the Cuban Reuben which comes served in a cigar box.
The drinks menu includes classic Cuban cocktails with rum and American whiskey and fruit-driven drinks.
Hacienda Bottled Mojito
Start with the Hacienda Bottled Mojito ($18) made with blanco rum, creme de menthe, lime, mint, falernum and orange bitters,
Old Presidente
or Old Presidente ($20) with aged rum, orange curacao, house spiced raspberry syrup and Angostura bitters, for easy drinking options.

The Cubano Punch ($19) is not to be missed, a good balance of house spiced rum, Campari, fresh orange, lime, lemon, guava, passionfruit, vanilla and tiki bitters.
Salted Coconut Espresso Martini
Fans of caffeinated drinks should not miss the Salted Coconut Espresso Martini ($17) with dark rum, coffee liqueur, salted coconut syrup and espresso.
Hacienda brings a fresh air to a hotel bar and is a welcome addition to Sydney’s night life.
