Hot from being awarded Hotel Bar of the Year by Australian Bartender Magazine’s Bar Awards, Grain Bar has launched a new cocktail menu, Longer Days, Brighter Nights designed for sipping throughout spring and summer.

Fairy floss, edible flowers, fresh figs and marshmallows feature in some of the new cocktails bringing an interactive experience to the guests.

Here are 5 new cocktails to take you through from refreshing afternoon sipping to after dinner libations.
What’s Your Number Cucumber
What’s Your Number Cucumber ($18) is a refreshing mix of Tanqueray Gin shaken with Yellow Chartreuse, fresh cucumber, mint and honey topped with Prosecco. Light, refreshing and bright on the palate, it makes for perfect sipping as the sun goes down while gazing through the windows at the ebb and flow of people at Circular Quay.
Swipe Right
Swipe Right ($18) plays on the whimsical side with fruity notes. Tanqueray Gin is mixed with with Cointreau, fresh mango puree and garnished with strawberry fairy floss.
Murphy’s Law
With Murphy’s Law ($20), Bulleit Rye meets Rocky Road liqueur along with dark agave and frozen mixed berries. Served on crushed ice, the drink would please those with a sweet dessert palate including the Rocky Road Chocolate garnish.
Caracas
If you like your drinks on the spirit forward side, Caracas ($18) is the one. Pampero Anejo rum is stirred over ice with a fig and caramel liqueur, molasses bitters and garnished with a caramelised fig. Though it reads like a sweet, the drink is perfectly balanced with the caramelised fig playing well with the richness and spice notes of the rum.
Project Mellow
Project Mellow ($20) is whisky dessert in a glass. A take on the famous Penicillin cocktail by Sam Ross, the drink combines smoke and sweet notes with Lagavulin 16yo, Johnnie Walker Black, lemon butter, ginger and lemon. The drink is further sweetened with maple syrup and garnished with a toasted marshmallow.
Other cocktails of notes are the Mexican Breakfast ($18) with El Jimador Reposado Tequila shaken with Cointreau, lime, avocado, honey thyme syrup served up with chilli salt rim; and the Retox ($18) , a riff on the whisky sour with Johnnie Walker Black shaken with chocolate chilli infused beetroot juice.
Grain Bar is located within Four Seasons Hotel Sydney in The Rocks and is open daily from 12 noon until late throughout the Daylight Savings season.
