This Must Be The Place is a new bar that opened in Darlinghurst today by award-winning bartenders, Luke Ashton (previously of Vasco) and Charlie Ainsbury (previously of Eau de Vie).

Step inside and you might think you’re in a new café with white walls, blond wood and a fresh Nordic fitout. Spot the bar towards the rear of the venue and you’ll know you that this is the place. It’s not a speakeasy or a themed bar, This Must Be The Place takes a fresh and light approach that reflects the style of cocktails.
The Bar
This Must Be The Place seats around sixty people with banquette seating, café style intimate tables against one wall and the coveted bar seats with rotating stools that adjust in height for the vertically challenged with the central feature being a reclaimed timber bar. But you do not come here to study intricate design but to be impressed by the drinks list.
L-R: Belafonte, New Power
The cocktail list is work in progress and is based on Spritzers but don’t think it’s all Aperol based. The Belafonte combines the elegant notes of Fino Sherry with botanicals from the gin, balanced with lemon and wild basil topped with Prosecco. It’s elegant, perfectly balanced and one to reorder on subsequent visits. The New Power balances the floral notes from the Fiore de Sicilia vodka, with the citrus from lemongrass Pisco and the sweeter notes of vanilla and orange. Again a superbly balanced drink.
Luke Ashton, Manhattan Cocktail
Classic cocktails are available off the menu and with the owners’ combined experiences, you’re in for some of the best libations in Sydney. You’ll also find specialty wines by the glass, craft beer and bar snacks such as Smoked Prosciutto with red eye gravy ($15) and Cuca Razor Clams ($18).
Crawley’s Imperial Shaker
This Must Be The Place brings a fresh new concept to the Sydney bar scene. The bright and airy fitout is well suited to the venue’s opening hours from 3pm. Spritzers are well priced at $14 with other drinks at $16 and classics and favourites are readily available.
If you spot the stairs at the rear of the venue, another level is set to open in a couple of months and will focus in heavier style drinks in a less casual setting.
