The Tilbury Hotel in Woolloomooloo has launched a new and revitalised look, the first one in 12 years. The makeover is the work of interior designers Luchetti Krelle responsible for venues such as Acme and Hotel Centennial.

The interior has soft pastels and gold brass backgrounds with new lighting and furniture that give the venue a modern look. The new outdoor courtyard offers al fresco seating with an iron bar structure and bold, bright backdrop.
Upstairs
Head Chef James Wallis has completely redefined the food menu to include a new Summer Grill Menu and Wine List with a focus on seasonality and quality Australian produce.
Baby Beetroot, Feta, Pomegranate and Quinoa Salad
The Baby Beetroot, Feta, Pomegranate and Quinoa Salad ($17) is light and fresh with crunch coming from the toasted quinoa.
Spanner Crab, Witlof, Green Apple and Fennel
Spanner Crab, Witlof, Green Apple and Fennel ($22) are three salty and creamy quenelles balanced with the mild bitterness of the witlof.
Sea Trout, Buttered Kipfler Potatoes, Asparagus and Seaweed Butter
The Sea Trout, Buttered Kipfler Potatoes, Asparagus and Seaweed Butter ($32) has wonderful moist flesh under the crisp skin with umami flavour coming from the seaweed butter.
Lamb Cutlet, Cous Cous, Aubergine Purée and Watermelon
It is a trick to the eye with the Lamb Cutlet, Cous Cous, Aubergine Purée and Watermelon ($33), perfectly cooked with the bright pink only on the outside of one side. The lamb is tender and full of flavour with the dish complemented with smoke from the aubergine purée.
Yuzu Curd, Short Bread, Meringue, Basil and Mandarin
The Yuzu Curd, Short Bread, Meringue, Basil and Mandarin ($15) is fresh and vibrant with the yuzu giving a flavour explosion.
Valhrona Chocolate Mousse, Chocolate Soil, Mascarpone and Vanilla Ice Cream
Chocoholics will be kept happy with the Valhrona Chocolate Mousse, Chocolate Soil, Mascarpone and Vanilla Ice Cream ($15), rich in taste and texture.
With its new makeover, The Tilbury Hotel is a warm and welcoming venue to catch with friends over a meal be it sitting at the bar, in the dining room or taking up a position under the umbrellas outside. There are elegant lounges upstairs that make you feel right at home – literally. The food is beautifully presented with fresh flavours and little twists which keeps it interesting and makes you want to return with your friends.
