WingHAÜS by Bavarian, a spin-off of The Bavarian has opened in the Gateway dining precinct at Circular Quay on Australia Day.

The new dining and entertainment concept by Rockpool Dining Group that fuses eight variations of sauce-doused, American-inspired chicken wings, and other treats and snacks, with 40 draught beers and margaritas on tap. There is a boisterous sports-bar vibe with 20 large-screen TVs. The new diner replaces Burger Project, which closed in December 2019.

WingHAÜS by Bavarian channels an American diner and accommodates 145 guests, with a mix of high-top tables, communal tables, bar stools and counter dining, and leather booths throughout the open-plan space. Walls are decorated with bright neons, nostalgic signage and unique sports memorabilia.

Inspired by the chicken wing’s cult status in the US, and The Bavarian’s famous buffalo wings, WingHAÜS by Bavarian offers a range of classic buffalo wings, fried wings (dusted in either chipotle or habanero powder) and boneless chicken tenders. All come in servings of 10, 15, 20, 50, or 100 pieces and with a choice of eight accompanying sauces with a heat index from mild to meltingly hot: teriyaki, Texas BBQ, traditional hot sauce, Korean, habanero, chipotle, afterburner and face melting with a choice of five accompanying dips: blue cheese, ranch dressing, honey and mustard, garlic, and haüs sauce.

The menu also features burgers, including The ChookHaüs with secret-spiced chicken breast with habanero hot sauce, Texas BBQ sauce, cheese, coleslaw and pickles. Snacks include hot chips, buffalo ranch chips (smothered in hot sauce and ranch dressing), Texas ranch chips (with Texas BBQ and ranch sauces), onion rings, potato gems, coleslaw and deep-fried pickles.

Sweets include a classic New York-style cheesecake, and deep-fried chocolate bars and ice cream – choose from Mars, Snickers or Picnic.

Also available on the menu are limited-edition, All-Star Flavour Series menu items, featuring the mellow, maple-syrup notes of Jack Daniel’s Tennessee whiskey. Sticky Jack Daniel’s sauce douses a range of fabulous fried wings. Burger lovers can also score a whiskey-inspired win with JD’s Chookhaüs burger, which layers secret-spiced chicken breast, Sticky Jack Daniel’s sauce, habanero hot sauce, coleslaw, cheese and pickles in between a soft white bun. Or go for a hat-trick with a frozen Jack & Coke that is poured straight from the slushie machine. Add a float of Chambord for soft undertones of black raspberry.

A long bar with high-stool seating accommodates 15 guests and features sister establishment The Bavarian’s signature stein chandelier, which holds over 500 glass steins, and a custom-built, beer tap wall.

German beer stalwarts Löwenbräu, Paulaner, Franziskaner, Spaten and Hofbräu are featured alongside American bellwethers Budweiser, Stella Artois and Goose Island, prized Belgian brews by Hoegaarden, and local heroes 4 Pines and Pirate Life.

Cocktails on tap showcase the margarita, old fashioned, Aperol spritz, negroni and espresso martini. Frozen margaritas are available in classic and strawberry flavours.

State of the art technology wirelessly streams up to 20 games simultaneously, so diners can immerse themselves in their favourite sport or game.
