The Paddington Inn is set to reopen on Thursday, 8 September with Head Chef, Justin Schott at the helm.
After six months of renovations, the venue will have a new dining room and bar with new interiors by Sydney designer George Livissianis. Not to be confused with The Paddington by Merivale, The Paddington Inn is a Solotel venue located on the corner of William and Oxford Streets.
Aperitif-style cocktails by Solotel Group Bars Manager, Jeremy Shipley featuring Australian vermouths will take centre stage as well as cocktails such as the Negroni and Tom Collins made with small-batch Australian gins and whiskies.
The front bar menu includes fish and chips with pickled onions, salt cod pikelets with chickpeas and shallots, jaffles, and chips with malt vinegar. At the rear of the venue, a new a la carte restaurant will offer dishes such as chargrilled Fremantle octopus with grilled fennel and spicy nduja, a whole roasted Thirlmere duck with fermented red cabbage, or an 850g Rangers Valley rib-eye made to share.
The Paddington Inn will be open from Thursday, September 8 for lunch and dinner seven days.
