Marchand and Burch Wines Dinner

Pascal Marchand of Marchand & Burch Wines, hosted an exclusive dinner at the Argyle Xchange Private Dining Room on Tuesday, 21st October.

Pascal Marchand from Burgundy and Paul Boulden, Brand Winemaker, welcomed guests and introduced the wines during the evening.

On taste were some exceptional wines from both the French and Australian Marchand & Burch Collections.

On arrival, Marchand & Burch Cremant de Bourgogne NV was served. This hand-harvested Cremant is golden yellow in colour with delicate bubbles and exhibits a fruity flavour with citrus notes. Accompanying the Cremant were Sydney Rock Oysters with Sherry Vinegar and Eschallot, as well as Salt Cod Croquettes and Harissa.

Salmon Gravlax Roe with Woodland Sorrel and Creme Fraiche

Salmon Gravlax Roe with Woodland Sorrel and Creme Fraiche was light but with a distinct flavour that was delicate on the palate. Two wines accompanied this dish, Marchand & Burch Chardonnay and Marchand & Burch Mount Barrow Pinot Noir, both being 2013 vintage from Australian vineyards.

The 2013 Marchand & Burch Chardonnay from the Porongurup sub-region of the Great Southern is pale straw in colour with aromas of  grapefruit and lemon blossom. This is a truly exceptional wine that showed beautiful texture and a long finish.

The 2013 Marchand & Burch Mount Borrow Pinot Noir from the Great Southern had aromas of red fruit and mushrooms, with a good mouthfeel and a mid-length finish. This wine was lighter than what expected and would be worth trying  after a few years of cellaring.

Both of these wines have been aged in oak for one year.

Riverine Grain Fed Fillet, Veal Jus

The Riverine Grain Fed Fillet with Veal Jus was served medium-rare and was full of flavour, melting in the mouth. It was accompanied by sides of Potato Puree, Peas with Persian Feta and Mint.

The wines changed region as they moved to the French vineyards with 2008 vintages.

The 2008 Marchand & Burch Nuits-Saint-Georges “Les Damaudes” is sourced from a single vineyard with the vines aged between 30 and 60 years. The wine is delicate with red fruit and spicy, earthy notes and a fine finish.

The 2008 Marchand & Burch Gevrey-Chambertin is an elegant wine with pure fruit on show. It is finely structured with soft tannins and a long length on the palate. The midpalate is more rounded than the Nuits-Saint-Georges counterpart.

Both wines have been aged for 21 months in French oak barrels.

Platter of Selected Cheeses

A selection of cheeses (French Brie, Australian Cheddar and French Blue) was accompanied by the 2008 Marchand & Burch Shiraz aged in French barriques for 16 months. This second vintage is 100% from Margaret River in Western Australia while the first vintage was a blend of Margaret and Frankland Rivers. Deep red and purple in colour, the earthy wine has aromas of plum, spice and chocolate. Fruit and spice are evident on the mid-palate with some oak and chocolate is evident in the finish.

The Marchand and Burch Wines Dinner was held on Tuesday 21 October, 2014 at the Argyle Xchange Private Dining Room.
