Hylander Session IPA: A Sensory Beer Experience

Sydney Brewery has collaborated with the music producer Hylander to create Hylander Session IPA and showcase how senses are interlinked, such as drinking beer and listening to music.

It is said that different notes and frequencies you hear can make beer and food taste sweeter and other notes bitter, sounds activating different parts of the palate. This is what Hylander (Connor McLeod), a music producer, was studying in Austria at MCI (Management Centre Inssbruck) before reaching out to Sydney Brewery with a unique idea.

Connor McLeod studied Beverage Technology (a sub-field of bio-engineering), a study related to sound and referred to as ‘sonic seasoning’. Essentially centred around the concept of Synesthesia, a neurological phenomenon where stimulation of one sensory pathway causes an involuntary second pathway such as a connection of sweetness to higher pitches and bitterness to lower pitches.

The Sydney Brewery team collaborated with Hylander to create a new brew with flavours that would coincide with his soundscape. A Session IPA suited the theme and adds to the collection of exclusive brews at Sydney Brewery Surry Hills. The Hylander Sesson IPA has a low ABV of 4.5% but bold in flavour from the use of Galaxy, Citra and Mosaic hops to bring out notes of passion fruit, citrus and pine.

Hylander has developed a soundscape that will enhance the IPA’s unique tastes and flavours, using different frequencies to create a sensory beer pairing experience which was launched at Sydney Brewery Surry Hills.

During November, the venue will host a ‘Sensory Beer Dinner’, a four-course degustation with matching beers and ciders (including Hylander Session IPA) accompanied by four soundscapes developed by Hylander to bring out different flavours in both the food and drink for a unique evening.
