PS40, Sydney

To savvy Sydney-siders and bar flies, the name PS Soda should be all too familiar. The team behind the hand-crafted sodas is soon to open PS40, a unique cocktail bar concept in the heart of Sydney’s CBD.

Thor Bergquist (ex General Manager of Experimental Cocktail Club in London and New York, Der Raum in Melbourne and Tippling Club in Singapore), Michael Chiem (former bar manager of Sokyo and Black, and Bulletin Place) along with Creative Director Livia Lima have combined their talents to bring together a venue that fuses an industrial bottling setup with the warmth of a small bar.

The cocktails at PS40 will focus on seasonal produce, sodas or savoury elements to bring a unique take. Think Batanga! with native Wattle Cola and green coffee bean infused tequila, lime and smoked salt, and 3 Dots & a Dashi combines Cognac with pineapple-dashi, falernum and pimento. The food will range from preserves and reserves with in-house terrines, pickles and cured meats such as the Morcon Salami dish, with pickled  watermelon rind, fresh watermelon and pangrattato. The range of sodas will be made, bottled and poured in-house.

PS Soda can be found at top venues such as Archie Rose, Bennelong, Anason, Lazy Suzie, Lot 1 Sydney and Hunter Gatherer with more bars and restaurants coming on board.

PS40 opens April 2016.
