With Bastille Day approaching, celebrate la fête nationale at Silvester’s Restaurant with a special French menu that’s a tribute to Paul Bocuse.
Located at the Marriott Hotel in Sydney, Silvester’s Restaurant is going French for five days. French Chef de Cuisine, Raphael Szurek who was an apprentice under renowned Lyonnais chef Paul Bocuse also has several Michelin star and award-winning restaurants across Europe and Asia in his experience. His Bastille Day menu is a tribute to the chef who has inspired many over the years.
Running for five days, between the 10th and 14th of July, the menu offering is an exquisite six course degustation. Dishes can also be paired with one of the over 100 premium, sommelier-picked wines available on the evening.

Chicken Liver Pate, Truffle, Brioche
Baked Burgundy Snails with garlic and parsley butter
V.G.E. Soup, beef consomme, foie gras, truffle, vegetables Matignon (Paul Bocuse signature dish)
Slow Cooked Corn fed Chicken with morels sauce
Leather Jacket Fish Cheeks Meuniere with kohlrabi and beurre blanc
Crepes Suzette with caramel and Grand Marnier
Silvester’s restaurant is located inside Marriott Sydney Hotel at Circular Quay in Bulletin Place and adjacent to Three Bottle Man bar, currently offering an all-Australian DIY Martini. Silvester’s Bastille Day menu runs from 10th and 14th of July 2018.
