2015 WynnsDay Collection Dinner at Stockroom, Double Bay

Wynns Coonawarra Estate has previewed their 2015 WynnsDay Collection ahead of the public release on 5 August at a special dinner held at the Stockroom, InterContinental Sydney Double Bay.

The dinner was open to the John Riddoch wine club members with local and seasonal produce matched to the newest wine releases.

The five course dinner by Executive Chef Julien Pouteau showcased a selection of produce mainly beef, pork and cheese cooked on Stockroom’s robata grill to complement the different wine tastings per course.

Senior winemaker Sue Hodder gave a brief introduction to Coonawarra in South Australia before introducing the wines in the new collection.

The 2015 releases are a tribute to the well loved Wynns signature style showcasing fine structure, balanced fruit and includes the Black Label, V&A Lane, Michael, the Childs Vineyard and the new release of John Riddoch.

Chargrilled Halloumi

The first course was Chargrilled Halloumi with burnt orange, green olive and Rosemary oil paired with the new 2013 Wynns Black Label Cabernet Sauvignon, picking up on the olive and sage notes in the wine. The exquisite 2008 Wynns Black Label Cabernet Sauvignon was also on taste, highlighting the effect of age on a fine drop.

Butter grilled ‘white cloud’ cauliflower steak

Next was the standout dish of the evening, Butter grilled ‘white cloud’ cauliflower steak, calamarata pasta and holy goat cheese. Smoky, earthy, salty and savoury flavours were complemented with the bright fruit and fine tannins of 2013 Wynns Black Label Shiraz.

Sticky Pork Ribs

Moving onto meat dishes, the Sticky Pork Ribs, scattered with peanut, corn and coated in homemade BBQ sauce was smoky and sweet, with a creamy avocado and charred corn. Two wines were paired with the dish, the 2013 Wynns V&A Lane Shiraz, with ripe fruit and berry notes and the 2013 Wynns V&A Lane Cabernet Shiraz with bold fruit and hints of spice.

NY Steak with Chimichurri and Persimmon

Beautifully charred, the NY steak with chimichurri, persimmon and shallots with paired with the superb 2012 Wynns Childs Single Vineyard Cabernet Sauvignon. This single vineyard selection brings notes of summer berries, leafy spice and fine tannins to the palate – an exquisite wine with good balance, length and fine oak.

Local Cheeses

To finish, a selection of local cheeses was paired with two iconic Wynns wines. 2012 Michael Shiraz is named after Wynns youngest son and is made using fruit from the best vineyard sites in Coonawarra and only when the grapes are of an exceptional quality. Thw 2012 vintage is succulent on the palate with complexity and fine tannins.

John Riddoch Cabernet Sauvignon 2012

The most anticipated wine was Wynns’ flagship wine, the 2012 John Riddoch Cabernet Sauvignon, made only when the grapes are of exceptional high quality. Aromas of black fruit and fine oak lead to a luscious palate with concentrated berries and cassis flavours with delicate spice and elegant oak finish.

The 2015 WynnsDay Collection will be released to the public on 5 August 2015.
