At the Rooftop Pool and Lounge of the InterContinental Sydney Double Bay, you could easily lose your sense of reality.
Overlooking the tranquil yacht-dotted Double Bay with luxurious private cabanas that invite lazy lounging and an infinity pool, you could easily think you’ve been transported to the Mediterranean. Decked out in maritime blue, the intimate space also features a bar with dining options making it an ideal spot to relax, unwind and detach from the world.

You don’t need to be a hotel guest to enjoy the facilities. Before midday and depending on availability, visitors can enjoy the venue without booking. There is no minimum spend and the space can be enjoyed over a coffee, freshly-made juices or full breakfast from the menu. Breakfast is served from 8am to 11am and the menu includes Spiced Honey Sonoma Muesli and Blackened Spiced Trout Bagel.
From midday, bookings become essential and for visitors, there is a minimum spend on food and drink of $250 per person. A variety of menu options are available including Cured Tuna Belly, Marron Crayfish Rice Paper Rolls and Wagyu Beef Tartare.
The venue invites languid sipping with champagne available by the glass, bottle and magnum. The cocktail list is concise but comes with an option to make your own. Choose with spirit, sugar syrup, herbs/spices and fruit, and let the bartender prepare it for you. Alternatively, start with Kat on a Hot Tin Roof, made with vodka, clarified tomato gazpacho, in house-made Bloody Mary mix and finish on the Sultry Sunset, a mix of Tequila, pink grapefruit, rosemary & basil soda, chilli syrup and apple juice.
You can enjoy the Rooftop Pool and Lounge until one hour past sunset. Before you leave, take a peek down at the French provincial courtyard with its evergreen trees and manicured garden then mender down and catch the lift the lift to the Stillery bar for some of the finest gin libations before dining at the Stockroom restaurant.
