Mjolner Sydney Launches New Menu with Head Chef Joachim Borenius

Since Mjolner Sydney has opened one year ago, it has since launched their most comprehensive menu change since May 2017.

Head Chef Joachim Borenius, brings his extensive experience from international and local restaurants such as The Fat Duck, Per Se, Marque and Pei Modern to a menu with a dedicated focus on seasonality.

Mjolner’s signature formula of bird, beast, fish and vegetable mains from the rotisserie continues with a menu that highlights his affinity for seasonal and sustainable produce, showcasing and complimenting ingredients with both modern and traditional techniques.

Expect dishes like Roast pork belly with red cabbage and apple miso butter; whole rainbow trout seasoned with fennel, capers, burnt butter and lemon; and a whole smoked celeriac complimented by roast chestnut and grapes and lathered in a luxurious porter sabayonne.

The Mjolner Sydney kitchen is serving up Chef Joachim Borenius’s new menu from Monday 21st May.
