3TO7 is a cool new venue that combines creativity, art, food and wine in one intimate space. Deriving its name from the address, 3 to 7 Danks Street in Waterloo, the New York style brunch bar by day transforms into a stylish wine bar by night.

Owners Petr Dvoracek (ex Merivale) and Ashleigh Howe (Murray’s Craft Brewing Co) have sought to create an unconventional and inviting space that blends food and drink with design and art. The result is a dynamic venue that changes mood depending on the art installations at the time which are said to include street art, music and popular culture pieces.
3TO7 Launch Party
Launched on August 27, the Waterloo venue showcased an exhibition of floral artistry by the Design A Flora collective. The art displays will be on rotation every four to six weeks.

Guests and media sipped on Perrier–Jouët champagne and champagne cocktails and enjoyed a selection of tasty bites from Salt Meats Cheese such as salamis, soft and hard cheese and figs.
During the day, 3TO7 serves brunch until 3pm and by evening, the menu changes to charcuterie platters and share dishes to complement the wine list. A selection of fine artisan products and meals will also be available for patrons to purchase.

The vibe at 3TO7 during the day is a mix of casual chic and art in relaxed surrounds. Eight high tables and stools with metal and timber add a rustic touch to the laneway style venue.

The all day brunch menu offers dishes to be shared or enjoyed individually with options ranging from the light and healthy, to the savoury and the sweet.
The chef’s brunch tasting plate is hard to beat, and is arguably Sydney’s best value brunch. For the price of $24 per person or $34 with a Bloody Mary, it offers a delicious selection of sweet and savoury dishes that ensure you don’t leave hungry. The dishes shown below are representative of what is served for two persons.
Soft poached egg, smoked kipflers, harissa tomato, chorizo, haloumi and sauce vierge
The soft poached egg dish is an array of two perfectly cooked soft eggs with a hearty selection of smoked kipflers, harissa tomato, cubed chorizo, seasoned haloumi and sauce vierge. Each component is delicious on its own, and when you break the perfect runny yolk, you get a medley of flavours that simply makes you feel good on the inside.
Savoury Dishes
The next dish offers a selection of light and fluffy scrambled eggs in one cast iron pot and house made baked beans with pork sausage in the other topped with smoked cheddar and served with sourdough – a duo in perfect harmony. Tasty bites of milk-poached chicken bagel come with basil aioli, black truffle, smoked peck, sorrel and tomato. A carrot and coriander relish accompanies the dish.
Sweet Dishes
You may think the brunch ends here but the sweet dishes are yet to follow. The house made crumpets with organic honey and vanilla yoghurt are a light and tasty option that builds into the delectable arabesque pancakes with salted caramel, fried banana, fresh thyme and orange clotted cream and lead to the finale, the irresistible and decadently sweet coconut milk French toast with roasted spiced pineapple, coconut maple glaze and seasonal berries.

Bloody Mary
The Bloody Mary could easily be part of the art exhibition. Made with Wyborowa Polish Vodka, it is served in a capsicum you can eat. It’s spicy and peppery, getting more peppery as it reaches the bottom and delivers a strong kick to start the day.
3TO7 has much to offer the Sydney dining and bar scene. With an accessible location from the city, the chic wine bar is a cool place for a drinks with friends by night and conversations over tasty bites. By day, the all-day brunch menu is premised on seasonal produce and fresh flavours served in welcoming and unpretentious surrounds.
3TO7 may be a newcomer to Waterloo but get there fast, it won’t be long before queues will become the norm.
