Start with Chicharrones, those irresistible, crunchy Smoked Chilli Pork Crackling dipped in Arbol Mayo.

Chips Guacamole

The Chips Guacamole combines smashed avocado with lime juice, onion and coriander. Snack on those as you contemplate the cocktail list with new additions to the menu.

Blue-eyed Cod Ceviche with Beetroot

The Ceviche changes depending on the market fish. Here, the Lime-Cured Ceviche consists of a tender blue-eyed cod, lime cured with beetroot which adds vibrancy to the palate as well as the aesthetics.

The main courses, or Comida Para la Familia offer a choice of two meats from four, pulled and carved at the table and designed to be shared.

Ancho Braised Beef Short Rib

The Ancho Braised Beef Short Rib is beautifully presented and comes with corn tortillas made in the traditional Nixtamal way. The meat falls off the bone, and with the array of sides and salsas, you can make customise your own tortilla with crema, lime wedges, tomatillo, cabbage slaw, ancho chilli salsa, picked jalapenos and onions, pico de gallo and the hot as Hades habanero sauce.

Chipotle and Honey Glazed Roast Pork Belly

The Chipotle and Honey Glazed Roast Pork Belly is sweet and tender with a bite of heat. The pork simply melts in the mouth and the bonus crispy crackling just begs to be picked up and savoured.

Other mains to choose from include Guajillo roasted lamb shoulder and Pan roasted chicken with lemon and chili de arbol butter.

Churros with Salty Dulce de Leche

Finish the feast with the moreish Churros, dipped in delicious Salty Dulce de Leche.
