Della Hyde, Darlinghurst

Applejack Hospitality is set to open Della Hyde, a new bar in Darlinghurst. The venue is to be located at the Hyde Park end of Sydney’s Oxford Street and will be the fifth venue to open in four years by co-owners Ben Carroll and Hamish Watts after Bondi Hardware, The Botanist, SoCal and The Butler.

Della Hyde is an interpretation of the luxe lobby bars of the grand hotels of the past. The bar will have a capacity of 150 persons with an opulent interior of brick columns with ornate arched beams, luxurious Chesterfield banquettes, period feature lighting and mirrors, and timber and tile floors, all in tones of pink and grey with brass finishes.

The focus is on glamorous cocktails and bar snacks as well as a DJ focus with music from a line up of local favourites from opening til late.

Joe Worthington, Della Hyde’s General Manager and Applejack Group Bars Manager Lachy Sturrock are behind a drinks list with classic and sophisticated cocktails that come with a twist, including cold-drip espresso aperitif-styled cocktails served over ice.

The menu by Group Executive Chef, James Privett brings a European and North African flavour with dishes such as pea and pancetta croquettes with harissa mayonnaise, and more substantial share plates including spiced lamb, olive, onion, spinach and labna pizza, and paprika chicken skewers with parsley and barley salad.

Della Hyde officially opens on 25 November 2015.
