General Chao in Chatswood is set to bring a new Modern Australian Asian experience to Sydney.
Located at District Dining, Chatswood Interchange, General Chao is a 187-seat restaurant featuring an open kitchen, neon signs, sleek fittings and two private dining rooms.
Inspired by the diverse flavours and rich tapestry of modern Asian cuisine, General Chao will offer guests a modern Australian-Asian sensory journey. XO sauce, the Asian condiment made from premium dried scallop, chilli, garlic and onion is set to be elevated to centre stage. Special house-made XO sauces will feature abalone, truffle and gold leaf taking diners from the traditional to the luxurious.
The cocktail list was developed by Michael Chiem of PS40 and includes the Barely There Spritz, Mandarin Oriental and Bloody Navy along with the signature XO Cobbler with Plantation XO sauce, Oloroso Sherry and bitters.
Head Chef & General Manager Son Sewoo (The Sovereign Room) has created a diverse and approachable menu featuring Australian produce such as Spencer Gulf prawns, Queensland mud crab, Valenca free range pork, Jack’s Creek Wagyu and bio dynamic lamb. His contemporary take will offer the perfect blend of Australian-Asian cuisine with culinary creations including sushimi grade Hiramasa Kingfish, Jasmine Tea Smoked Duck Dumplings, 24hr Braised Pork Belly in Masterstock and General Chao’s modern take on the classic Prawn Toast.
General Chao’s extensive premium wine and champagne cellar represents varietals from Australia and New Zealand’s leading wineries and regions, including Seppelt from Great Western Victoria, Chaffey Bros from the Barossa Valley and Church Road from Hawkes Bay in New Zealand.
General Chao is now open, serving lunch and dinner seven days a week.
